Waterford Organic GAIA 2.1 is part of Waterford Distillery's Arcadian range. In their Arcadian series, whiskey made with barley from fields cultivated organically and/or biodynamically is released.
THE HEAD DISTILLER AT WATERFORD DISTILLERY DESCRIBES THIS WHISKEY LIKE THIS:
Appearance: Golden peach with thick texture.
Fragrance: Orange peel, fresh soil, bread crust, brown sugar, milk chocolate, fruit salad, biscuits with prunes, lavender, marshmallows and buttermilk.
Taste: Spices, white pepper, grapefruit, licorice, cherries, cocoa powder, wine gum, dry toast, salted peanuts and lemon peel.
Aftertaste: Dry and spicy.

Barrels: 39 % first fill American oak, 17 % new oak, 19 % French oak and 25 % oak which previously contained sweet wine (port and marsala)

Behind Waterford Distillery stands whiskey legend Mark Reynier who was previously CEO of Bruichladdich Distillery – a distillery which he, together with a group of private investors, acquired back in 2000 from Whyte & Mackay for six million pounds. 12 years later they sold the distillery to Remy Cointreau for no less than £58m. Mark voted against the sale of Bruichladdich and in 2015 he therefore started another ambitious project; Waterford Distillery.
