Server for: An excellent companion to foie gras, cakes, desserts, blue cheese and as an aperitif.
Late Havest Tarapaca is best at a serving temperature of 10-13°C.
The wine:
Late Harvest is made from the following grape varieties: Sauvignon Blanc and Gewürztraminer. Sauvignon Blanc is one of France's widespread grape varieties, where it is particularly known from Bordeaux and the Loire. Gewürztraminer is a noble grape variety in Alsace. The grapes for Late Harvest are picked manually in May, where the natural sugar content is over 300 g per liters of must. The must is particularly intense, rich in flavor and aroma substances.
The vinification takes place at a low controlled temperature. The majority of the must is fermented in stainless steel tanks, while 12.7% is fermented in second-time 225 liter French oak barrels. Due to the sugar content and the low temperature, the yeast cells work slowly, while all flavor and aroma substances are preserved for the finished wine. Fermentation stops when the wine has reached an alcohol strength of 12.5% vol. and 90 g of residual sugar. The wine is slightly stabilized before it is bottled.
Wine house:
The grapes for Late Harvest come from some of Viña Tarapacá's finest parcels in Isla de Maipo in the heart of the Maipo Valley, south of the capital Santiago de Chile, where the horizon is dominated by the snowy peaks of the Andes.
The soil in the region consists of deposits of volcanic origin and is rich in salts and minerals as well as clay and granite from the surrounding mountains.
