Chateau Du Haut Pick Sauternes, Organic

Chateau Du Haut Pick Sauternes grapes are harvested from vines that are between 37 and 40 years old and that grow in sandy and gravelly soil. It is harvested in several rounds as the noble rot develops. After the harvest, the grapes are pressed in a pneumatic press to ensure a fine and gradual extraction of the must. Fermentation takes place in temperature-controlled stainless steel tanks and after 16 months in French oak barrels, the wine is bottled.

Scent: Very inviting with fine and complex scents characterized by flowers and spices with notes of candied, exotic fruits and white flowers.
Taste: Here comes a little mango, roasted hazelnuts and acacia honey in a full and well-balanced Sauterne with good length in the aftertaste.
Server for: As an aperitif with a little foie gras, duck breast roasted with a little honey, perfect for blue cheese, enjoyed with desserts such as a cheesecake.
Storage potential: up to 10 years.
Served at temperature: 12-14°C

The wine house:

Château Bastor Lamontagne is located in Preignac in the Gironde. The river Ciron meanders away only a few kilometers from the property. It provides good conditions for the formation of fog in the early morning hours, which is essential for the development of botrytis cinerea. Only three properties in Sauternes are organically certified, of which Château Bastor Lamontagne is one of them.
