There are many aromas with hints of coffee, red cherries, orange peel, aromas of spices, fragrant wood and a touch of leather and raw cane sugar.
Taste: Dry and very vinous with astringent tannins from the Oloroso sherry cask. You taste blueberries and all types of red fruits, orange juice and a hint of toasted and burnt sugar (crème brûlée).
Aftertaste: Still feels dry but becomes more tanned and peppery and with a sherry hardness that almost becomes rye.
The rum comes from three different distillation methods (Frensh Savalle, Wooden Coffey and Double Wooden Pot).
It has been blended and matured for more than 4 years in its tropical climate. However, the vinous and dry character comes from the last 72 months that it has spent in fresh Oloroso sherry casks in Europe.
