Valpoicella Ripasso Classico Superiore
Ripasso Valpolicella with warm and tasty dark berries is made using the correct Ripasso method, where the Valpolicelle wine ferments on the lees of the house Amarone.
Smell and taste: Heat and power rise from the glass with spicy and almond notes. Notes that repeat in the taste with dark berries and spices.
The wine:
This Ripasso is produced from the grapes Corvina (60%), Corvinone (20%) and Rondinella (20%). The same grapes used for Amarone. After careful sorting of the grapes, pressing and fermentation, the wine is stored until February, when the wine is again fermented. 2nd fermentation is with the lees from Amarone production. This gives the wine a richer colour, more aroma is extracted and the alcohol increases. The wine is then stored again. It rests for 12 months in small French oak barrels (barriques), and another 6 months in bottle before leaving the cellar.
The result is an unusually tasty Ripasso, with heat and power. The color is a beautiful ruby red. A delicious almond-like aroma rises from the glass, which really gives you the appetite to taste the wine in large mouthfuls.
Server for: Good hearty meat dishes possibly. seasoned meat from the grill. Ripe cheeses.
Ripasso Valpolicella should be aerated after opening the bottle and the experience will be even better if the wine is left in the carafe for 1-2 hours before serving.
Terre del Moro is created by the wine-passionate Veneto family Arduini, who have a long tradition of producing the region's classic wines.
