Alvear Solera Pedro Ximénez Sherry PX 1927 made from the Pedro Ximenz grape, which is one of the sweetest that can be produced. This is sweet and full-bodied with intense aromas of prunes and chocolate. Deliciously intense in taste with dense fruit and a long, deep aftertaste with sweetness in a nice balance. which can be enjoyed as an aperitif or as an accompaniment to desserts.

Alvear Solera Pedro Ximénez Sherry PX 1927, made from the best grape in the area. The grapes are harvested at a high level of ripeness, after which they are placed on mats in the sun to dry into raisins. This drying gives a very high sugar content compared to liquid, hence the higher alcohol strength and degree of sweetness. After the careful pressing, a quantity of alcohol is added to the must to stop the fermentation and retain the sweetness in the wine. The wine is then transferred to the so-called Solera and Criadera system, which is a special but actually very simple maturation system; several rows of dishes are placed on top of each other.

There is a passage between the individual rows of dishes. The wine is filled in the upper barrels, while it is tapped from the lower barrel. In this way, there is always a bit of the oldest vintage in the final bottling. Alvear Pedro Ximenez 1927 was thus started in 1927, and the wine therefore contains a small amount of Pedro Ximenez from 1927. This creates a high degree of stability and complexity in the wine.

Server for: Desserts, fruits and cakes or pour it over the ice cream which will have a fantastic taste. Can also be used for a large selection of blue cheeses.
