Giol Prosecco DOC Treviso Frizzante is an organic and vegan prosecco from the area of Treviso in the Veneto region of Northern Italy. It has a fresh and fruity taste with fine bubbles and a light carbonation, which makes it a refreshing drink.

This is a prosecco that is produced in a sustainable way and without the use of animal products, so it is suitable for vegans. It is made from 100% Glera grapes, which are the only grape type allowed to be used in the production of prosecco.

Scent: Bursting with fruit coming out of the glass like green apples and peaches with notes of wisteria and acacia.
Taste: Very pink and crisp with a fruity structure that is very balanced.
Server for: Perfect for seafood, fish, vegetable risotto, smoked salmon and cheese.
Serving temperature: 8-10°C

Giol Prosecco DOC Treviso Frizzante is a good choice for those who want an environmentally friendly and ethical prosecco without compromising on taste. It is perfect as an aperitif or with light dishes such as salads, seafood or sushi.

Prosecco:

Prosecco Giol DOC Treviso Frizzante is made exclusively at Glera. The vines grow in clayey, sandy soil. The temperature in summer reaches between 28o and 30oC during the day and at night is around 10oC due to the mountains in the area. The grapes are harvested by hand at optimal maturity. After arrival at the winery, the grapes are de-stemmed and pressed and the must undergoes sedimentation at a low temperature, after which yeast is added. Fermentation takes place at a controlled low temperature of 14oC. After the first fermentation, the wine is lightly clarified and filtered. Second fermentation takes place in stainless steel tanks under pressure, in which the pressure rises to about 2.5 atm over the course of a month until the fermentation process is over. The wine is clarified before final filtering and bottling.

About the Manufacturer:

Giol is located in Northern Italy not far from Venice and close to the border with Austria. The castle was built in 996 and has seen a lot over the years. During the First World War, the entire area was invaded by Austria and the castle was a base for Austrian troops. There are still bullets in some of the barrels in the cellar from that time.

The castle has been a vineyard under different owners since 1427. The current family bought the winery in 1919, when Giovanni Giol returned to Italy from Mendoza in Argentina, where he had built a true wine empire. Today, it is Giovanni's great-granddaughter, Luisa, who runs the winery with the help of her son Vittorio. Giol became a certified organic wine producer in 1987, and the winery is run with passion and great respect for nature.
