Lindores The cask of Lindores 49.4 % Bourbon Cask from Lindores Abbey distillery is matured in bourbon casks for more than three years.
Scent: Soft and fruity with pears and red apples, caramel with sweet vanilla and hints of creamy citrus.
Taste: Lovely fruity with creamy apples together with citrus and toffee.
Aftertaste: The delicious flavors linger with pepper spice in a medium long finish.
The contents of the bottle are exactly 49.4% ABV, and this is not a coincidence. It is a reference to the year 1494, when spirits were first produced at Lindores Abbey.
The somewhat special and very beautiful bottle design is inspired by the decoration on the bricks that were found during the excavation of the old Lindores Monastery.
Lindore's publications:
Standard release Lindores Lowland Single Malt Whiskey released by Lindores Abbey Distillery. Consists of a blend of whiskey from bourbon, wine and sherry casks. Each year they release whiskeys from each of these three cask types in limited quantities.
This release consists exclusively of the whiskey that has been in bourbon casks. It can be advantageously compared to the standard release. Here you can see how big an influence the dish can have on taste and colour, with just a few years of storage.
Fermentation:
Lindores has one of the world's longest whiskey fermentation periods – a whopping 117 hours. That, together with an unusual distillation process, results in a single malt that, despite its young age, has a thoroughly remarkable character.
Lindores uses a specialized distillation system. After the whiskey has been distilled for the first time in a massive 'wash' still called "Dodo", it is transferred to two sister stills. They are named after the owners' daughters Puppy and Gee. The fact that the whiskey is distilled in the second round in two smaller kettles, rather than one large one, means that there is twice as much contact with the copper on the inside of the kettle. This enhances and refines the wonderful nuances of flavor that develop during the extraordinarily long fermentation period.
The distillery:
In the Scottish financial archive from June 1494, you find the earliest known reference to what is today called Scotch Whisky. The piece of text is about a shipment of malted barley to a monk from Lindore Monastery in Scotland.
"To Brother John Cor, 8 sacks of barley malt, with which to make Aqua Vitae for King James IV"
This quote cements Lindores Abbey as the spiritual home of Scotch Whisky. It's a legacy that Lindore's Abbey Distillery still carries to this day, more than 500 years later.
Although Lindores may be rich in tradition, the distillery is quite young. The methods are state-of-the-art and innovative, experimenting with new fermentation times, specially designed boiler systems and blending across cask types.
