Top class Ripasso Della Valpolicella DOC from Fabiano – A small Amarone that will bite spoons with the great wines from Italy. It is juicy and powerful and very well balanced with dark red berries, mocha and chocolate mixing with soft tannins with a hint of residual sweetness.
Scent: Notes of dark chocolate and warm blackberries.
Taste: Powerful with a bouquet of red berries, mocha, chocolate and soft tannins. Faniano Ripasso The wine has a slight residual sweetness that is balanced in harmony with the powerful fruit and concentration.
Serving suggestion: Red meat, Christmas dishes, barbecue dishes, game and cheese.
Serving temperature: 16-18°C.
Made from a combination of 65% Corvina, 20% Rondinella, 5% Molinara, 5% Negrara and 5% Croatina. Which is a classic composition for the area. The grapes are harvested in mid-October and then undergo a 20-day maceration at a controlled temperature.
At the end of March, the wine is transferred to the remains of the house's Recioto and thereby undergoes a second fermentation, hence the name Ripasso. This second fermentation adds power and sweetness to the wine and gives it its very special character. After this fermentation, the wine is stored in large oak barrels before bottling.

The wine house:
Fabiano harvests his pigeons around the old village of Negrar di Valpolicella, where the fields are laid out on slopes 300 meters above sea level. The area is known to many Danes when the holiday is held east of Lake Garda. It is hilly and warm here and the soils here provide optimal conditions for the local grape varieties. Here, as elsewhere in Italy, the best wines are produced from grape varieties adapted to the microclimate. The soil consists of dry limestone resting on a hard subsoil of limestone, a well-drained and very fertile growing ground for the classic grape varieties of the Valpolicella district.
Fabiano is a family-owned producer and Nicola Fabiano himself is involved in the production of the house's wines. The style they adhere to is classic with a twist of modernism. Most often, large old casks are used, but in recent years there has been more experimentation with the use of small casks, which contributes to more sweetness and concentration in the house's wines.
