This extremely rare 30 year single vintage Dalwhinnie from the Special Release series 2020 has an astonishing intensity for its age and comes exclusively from refill American oak hogsheads, all filled in 1989. Three decades of maturation have given a fine elegance to the intense distillery character and paves the way for the aromas of its moorland to unfold. The result is silky sweet and yet surprisingly peppery.

Scent: The delicious pearls come with a mild feel with some tingle and a little dry. The aroma is a bit reserved, dusty and somewhat closed in the beginning. Sweet and perfumed with the scents of the heathland and dried herbal notes, discreet touch of butterscotch and candies, pencil case of new wood in the base. With water it gets a hint of burnt matches.
Taste: At cask strength, soft, creamy and slightly astringent in texture, the exuberant taste is lusciously sweet, with a dry, gradually intensifying peppery heat. With a good drop of water, the flavor profile is barely changed, but the taste is now more subdued, sweet and spicy, while being clean and fresh.
Aftertaste: Long and warming. Water cools the heat, but leaves a lot of hot spices in the aftertaste.

Dalwhinnie is a mountain malt, from the highest distillery in Scotland. Part of the country's coldest inhabited areas. It is as adapted to the region and as fiery in taste as the mountain hares that fight for their territory in the spring.

The aroma is gentle; sweet and perfumed with a scent of herbs, subtle notes of butterscotch and fruit candies, with a base of spicy wood. The texture is soft and creamy, the exuberant taste is deliciously sweet, with a dry gradually increasing peppery heat. The finish is long and pleasantly warming.
