Cotswolds Bourbon Cask Bourbon Cask Single Malt Whiskey is created from selected first fill ex-Bourbon casks in which our rich and fruity single malt spirit has been patiently matured. These premium American oak casks are ideal for storing whiskey and offer delicious notes of vanilla and honey. This sweet and malty cask strength expression is a whiskey for purists and a wonderful expression of their distillery character.

Scent: Decadent vanilla cream with a hint of malt.
Taste: Raisins and caramelized figs, delicate vanilla.
Aftertaste: Slightly earthy with a touch of honey.

Cotswolds Bourbon Cask is made from selected ingredients:

Malt: 100% locally grown, traditionally floor malted barley from the Cotswolds.
Yeast: Two complementary varieties – Anchor and Fermentis – to ensure good yields and excellent fruit flavour.
Water: Village water supply – filtered, softened and demineralised before use.
Tree: First-class ex-Bourbon casks from Kentucky, made from American white oak (Quercus alba).

Their Bourbon Cask expression begins with their new make spirit, which is already incredibly smooth, rich and fruity thanks to the yeast they use. Long 90-hour fermentation. Dilutes it to 63.5 % ABV before filling premium Kentucky American oak barrels for full-time maturation. Here, the key maturation processes are flavor extraction, oxidation and evaporation to work their magic on their already smooth spirits. These barrels have not been steamed so they are still moist, their staves soaked in wonderful Bourbon whiskey.

Over the years they have combined these casks with STR former red wine casks to produce our Cotswolds Signature Single Malt Whisky. However, this is their first whiskey bottling that is exclusively Bourbon matured. Truly a whiskey lover's malt, this whiskey expression delivers the typical sweet flavors you would expect from Bourbon casks, notably vanilla, honey, malt sugar, caramel and even the occasional touch of coconut.

Bottle non-chill filtered with only minimal proofing down for maximum flavor, with no added color.

Cotswold Distillery is an English distillery that has been producing whiskey, liqueur and gin since 2014. The distillery is located, as the name suggests, in the rustic Cotswold region in the mid-southern part of England.

Cotswold is one of the first distilleries to make whiskey in England, and thus there was also a requirement to stand out from the heavy boys in Scotland (and partly Ireland). Fortunately, the young distillery was helped by the legends Harry Cockburn (former manager of the Bowmore distillery) and Dr. Jim Swan (one of the world's leading experts in distilling and maturing whiskey).

Cotswold Whisky

Whiskey forms the core of Cotswold's work, in addition to their signature bottle of Cotswold Single Malt, they also release a number of other whiskey types (including a peated whiskey) all of which are bottled at cask strength or near cask strength. Unlike most Scottish distilleries, Cotswold does not use finish, where the whiskey is stored in bourbon casks, then given a few months in a selected cask type; Instead, the whiskey is stored right from the start in the selected cask type, and thus the influence of the cask on the various releases can be felt much more clearly.
