Charles Mignon 1. Cru Champagne Rose Brut is a gloriously fresh rosé Champagne, where all the grapes come from fields classified as 1er Cru. A nicely balanced wine that is very widely applicable, due to its very vinous style.
Scent: Here it is dominated by red roses and fresh berries. Experience fresh bubbles and a light sweetness of plums and apricots in good balance with the long intense aftertaste.

Server for: Light meat dishes, fish, welcome and aperitif.
Serving temperature: 8-10°C.
Champagne Rose is made from Pinot noir and Chardonnay grapes.
Champagne:
1er Cru is a designation that in Champagne is assigned to the individual fields. Fields are awarded points for their excellence within various sub-categories ranging from slope, hours of sunshine and grape variety to yield. Only very few fields are awarded the maximum 100% required to be Grand Cru. The level below this is designated as 1er Cru and covers fields with a minimum of 95%. Wines from here usually have more complexity and finesse than standard Champagne.

Charles Mignon is located in Epernay, one of the most important towns in the Champagne region. There are many large houses here, but only a few that, like Charles Mignon, have family character and hold fast to their identity. All wines are produced with an eye on family traditions over time and Bruno Mignon ensures that his family traditions are maintained. The cellars lie deep below the city and here the Champagnes are allowed to develop their complexity to the delight of the true connoisseur.
The wine that will end up as champagne undergoes a second fermentation in the bottle. This happens in Charles Mignon's cool cellars, where the low cellar temperature allows for a slow fermentation process in the bottle and thereby develops the finest bubbles. When the fermentation in the bottle is over, the bottles are placed horizontally in racks, where they are rotated and slowly turned to a vertical position with the stopper downwards, so that the deposit (precipitate) can be collected at the temporary stopper. The depot is frozen into an ice plug that is ejected. The bottle is refilled with the same wine before the final stopper is inserted and tied to the bottle with a wire tie. During this last process, a little cane sugar is added to the wine, which ends up having a good integrated sweetness in the taste.
