Castellblanc Cava Medium Dry offers a wonderful balance of freshness and light sweetness with fine, intense bubbles and notes of citrus and sweet fruit. Perfect for festive occasions and as an aperitif. This semi-dry cava highlights flavors that complement light dishes such as fish and poultry as well as dessert. A cava that impresses with its sparkling freshness and a delicate straw yellow color.
Scent: The fragrance is complex with notes of ripe citrus fruits and hints of leather and petroleum, which give it an elegant depth.
Taste: The taste is balanced with a nice sweetness. It mixes with fresh citrus and soft mousse, which fills the mouth with intense, long-lasting fruit.
Aftertaste: Fresh and persistent with notes of sweet orange that underline the cava's semi-dry profile.
Castellblanc Cava Medium Dry is a semi-dry cava from the renowned Penedès wine region in Spain, where cava production is part of the area's proud tradition. The cava is produced primarily from Macabeo, Parellada and Xarel-lo, which are grown on clay, granite and calcareous soil – conditions that give the grapes a unique character. The grapes are carefully harvested in September, where only the best are used for production.
During production, the wine goes through a long maturation process. First, it ferments at a low temperature, and after the resting time, a carefully measured amount of sugar and yeast culture is added to produce the bubbles during a second fermentation in the bottle that lasts a full 15 months. This post-fermentation creates small, persistent bubbles and a complex flavor profile.
After fermentation, the sediment is frozen out and removed, after which a dosage is added to the wine for the right balance between sweetness and acidity. The result is a cava with a light sweetness that harmonizes perfectly with the cava's fresh acidity and citrus notes. Castellblanc Cava Medium Dry is suitable for both aperitifs, light dishes and desserts and creates festive bubbles for every occasion.
