Champagne Barons de Rothschild Brut (150cl.)

Champagne Barons de Rothschild Brut (150cl.) is a complex wine for all occasions. It is ideal as an aperitif or with food. It goes well with both light dishes with e.g. fish and shellfish, but is also really good for slightly heavier dishes with e.g. chicken or other white meat. Champagne is also a fine and unconventional choice for cheese.

Scent: Pear and almonds as well as fresh hazelnuts are noticeable here, accompanied by hints of white flowers and a faint roasted scent.
Taste: First powerful and persistent, then it becomes rounded but still powerful and yet pleasantly restrained, a good sign of the long, traditional aging in the cellars.
Serving temperature: 8-10ºC.

All the grapes for Barons de Rothschild Brut are harvested by hand and come from the best areas in Champagne. Brut is made from a base wine consisting of 60% Chardonnay, and the last 40% is a blend of Pinot Noir and Pinot Meunier. Many champagnes are made from the grape must from both the first and second pressing. But for Barons de Rothschild champagne, only the grape must from the first pressing is used.

The grape must from the first pressing is poured into small tanks, where fruit residues are allowed to fall to the bottom, so that the must becomes as clear as possible. First fermentation takes place in small stainless steel tanks. Yeast is added to each individual tank. The tanks are temperature controlled and fermentation takes place at a low temperature. The malolactic fermentation then takes place. After clarification and filtration, the base wine is often mixed with Reserve wines from previous vintages. The mixed wine is poured into bottles, a little yeast and sugar are added and the wine is stored at a low temperature (13ºC), whereby the fine bubbles are formed.

In the castle's cellars, the bottles are well protected from light and undergo a slow ageing. Barons de Rothschild Brut is aged for three to four years in the cellar. After which the champagne is finished and stored for at least six months, after which it is prepared for sale.

The three branches of the Rothschild family have joined forces to create a unique champagne. They are each experts in their field, have high standards for quality and great respect for long and old traditions. Mayer Amschel Rothschild was born in 1744 and since his founding of the Rothschild dynasty. Has run the company for seven generations with a good feel for the trends of the changing times.
