Abuelo XII Ano's “Three Angels” is a single estate rum from Ron Abuelo's distillery in Panama. This deep and elegant release, like its little sister Abuelo XII Ano's “Two Oaks”, is a combination of double-aged 12-year-old rums, first matured in white American oak bourbon casks, and then in extra-charred new oak casks. Unlike “Two Oaks”, this release is sourced only from the casks on the top row of Ron Abuelo's vintage pallet warehouse.
Scent: Roasted hazelnut, sweet spice and exotic fruits, with a hint of leather, dark chocolate and roasted coffee beans.
Taste: Intense – the burnt oak barrel clearly shines through – vanilla, honey sweetness and delicious dried fruits.
Aftertaste: Long-lasting, spicy and smoky – with notes of cocoa beans.
On the top row, the temperature reaches as high as 35°C. This means that the angel's share (the percentage of rum that evaporates each year) reaches a whopping 15% – compared to only approx. 3% in Scotland. This exceptionally high angel share is the source of inspiration for the name “Three Angels”. The extreme daily changes in temperature and humidity result in a rum of extraordinary complexity and flavor. In addition, "Three Angels" is also bottled at a higher alcohol strength than Ron Abuelo's other releases, which perfectly complements the more intense taste.
Three Angels is a variation of the award-winning Abuelo XII Ano's "Two Oaks", which among other things has won Double Gold at the San Francisco World Spirits Competition 2022.
About the Manufacturer:
Abuelo is a prominent producer of so-called Single Estate Rum. Which means that the entire production process, from the sowing of the sugarcane to the bottling of the rum, is handled internally by the distillery.
The fields where the sugarcane is grown are owned by Abuelo, and both sowing and harvesting are done in the traditional way by hand. Fermentation and distillation also take place in the distillery's own boilers, and the finished rum is stored in bourbon casks in the distillery's own warehouses.
Abuelo's storage method differs significantly in the rum world. This is due to the special climate of Pesé, the small lush valley on the Azuero Peninsula where the distillery is located. The area is characterized by moderate rainfall, cold nights and humid days, which contribute to a unique maturation process for the rum. This specific combination of climatic conditions results in an unusually high proportion of Angel's Share. Where up to 10% of the spirit evaporates each year as part of the maturation process – a significantly higher proportion than the average in Panama.
To compensate for this significant evaporation and the annual reduction of the alcohol percentage by around 1%, Abuelo uses the unique 'Vintage Pallet' method. This method involves refilling the casks every two years with rum from other casks from the same batch. This ensures that the casks remain fairly full and maintain the same age, resulting in a rum with extraordinary complexity and character.
