Dalmore 12 Year Sherry Cask Select is an elegant Highland Single Malt whiskey finished in three different styles of aged Oloroso Sherry casks, balancing nutty flavors with the influence of sweet Pedro Ximénez Sherry casks. Truly masterpiece by Richard Paterson Master distiller.

Scent: Caramelized orange, ginger and sultanas, all combined with honey
Taste: Here is dark chocolate with crushed almonds, which has been given a dusting of cinnamon
Aftertaste: Sweet mango with panna cotta and lemon sponge cake

Production:

Throughout the 12 years, Mastere distillers have matured the spirit. First placed in American white oak and EX Bourbon casks. A perfect start to the maturing journey as it thereby develops Glenrothe's style with chocolate, orange and spices. It is finished in casks with a very unique sherry. A mix of classic and aged oloroso casks with sweet Pedro Ximenez casks. All casks have produced a perfect result with an elegant Dalmore single cask malt bursting with sweet fruit and decadent spice.

Royal Legacy:

The King's gift, the 12-point Royal Stag, proudly adorns every bottle of The Dalmore. It encapsulates the distillery's royal heritage dating back to 1263. The emblem was bestowed on Colin of Kintail. The first chief of Clan Mackenzie after he saved the life of King Alexander III of Scotland from the fury of a charging stag.
In 1839, the Dalmore Distillery was founded by Alexander Matheson, a commercial adventurer determined to create a unique single malt whisky. In 1867, descendants of the Mackenzie clan took control of the distillery. One of their first changes was to adorn each and every bottle of The Dalmore with the red deer - a guarantee of incomparable quality.

Richard Paterson, a pioneer in cask curation, was the creative force behind The Dalmore for nearly five decades. He blazed the trail for current Master Whiskey Maker Gregg Glass, who continues an unbroken chain of visionary whiskey makers who are always pushing the boundaries to mature our spirits in the rarest and most exalted casks.
